Learn to Cure and Coldsmoke Food Using Traditional Authentic Methods
Learning "Traditional" methods with The Smoking Academy at fantastic locations in Suffolk; working with purveyors who have supplied Harrods, Selfridges as well as Fortnum & Masons, you will be taking home a range of fish, meat, olives, cheese and nuts, including a whole side of smoked salmon that you will have smoked yourself.
Our smoking guru Stephen learnt his skills from his grandfather, employing the traditional London Fish Smoking Method. Steven has accumulated a vast amount of knowledge going back to 1964. This method can now be passed to his students.
You can learn how to smoke fish at your own pace,or ask for a bespoke course in Charcuterie, or even a combination, depending on what you want. Course can last a day or four, depending on what you want to achieve.
Come along and meet like minded people who love smoked food. It's an easy and fun experience with enough time for each student to learn. Steven can take you through the steps to deliver delicious authentic cured and smoked food.
